Happy Butter

Dairy

Food hygiene rating pending

Ghee is one of those products where the gap between the good stuff and the tinned supermarket version is enormous, and the Totnes outfit behind Happy Butter has built its reputation squarely in that gap. Everything starts with organic, grass-fed, UK-sourced cultured butter, clarified into an award-winning West Country ghee. They also test for casein content and publish the results, which tells you something about how seriously the whole thing is taken.

Customers describe it as sweet, nutty and almost caramelised, with the buttery smell that cheaper ghee lacks and no sediment or rank aftertaste. It holds up to frying where butter would burn, works as a swap for nut and seed oils, goes into Bulletproof coffee, and plenty of people simply spread it on toast or crackers. If you have written ghee off on the basis of a world food aisle tin, this is the jar that should change your mind.
