Grappa is not the first thing you expect to find in a South Devon village, which is rather the point. Founder Cosmo Caddy travelled to Italy to learn the traditional techniques, commissioned an authentic copper still to be built there, and brought both back to Torbryan. The result is Dappa, a British grape-marc spirit made from skins upcycled from English vineyards after the winemaking is done, and the only one of its kind in the country.

The core Dappa rests in tank for at least twelve months, earthy and young with a clean finish. From there it branches: Dark Fire is Dappa aged in a Pedro Ximenez sherry barrel, bringing cherry, berry and apricot against a lingering smoke; Devoncello steeps organic Sicilian lemons for months; Chocolated uses cacao nibs and a touch of vanilla for something deep, ruby and syrupy.
