Boudicca Woodland runs the first One Mile Bakery in the South West from a kitchen in St Thomas, and the model is exactly what the name suggests: bread, soups and preserves delivered by bike within a single mile. Her food obsession goes back to grandparents who travelled widely and a mother who insisted her children could at least make the staples. An arts administration career ran alongside it, on the grounds that theatre and food both build connections.

Deliveries work on subscription, either a month of four or three months of twelve, built around local seasonal produce, with a Large Classic Loaf available to St Thomas customers. The baking classes are the other half of the business: an Introduction to Sourdough running 9.30am to 5pm and demystifying the whole process for home bakers, and an Italian Baking day, 9.30am to 3pm, focused on time and place rather than technique.
