Tofu has been made by hand in Devon since 1984, which puts Dragonfly a long way ahead of the plant protein boom that eventually caught up with them. Working from Buckfastleigh, they follow an authentic Japanese process practised for thousands of years, pressing carefully and delicately so the proteins never turn tough. Certified organic by the Soil Association since 1991 and BRC food safety accredited since 2018, they have the paperwork to match the pedigree.
The organic tofu is all-natural, made with 100% organic ingredients sourced locally wherever possible, and comes out with a premium Japanese texture that holds its structure and moisture while soaking up umami flavours properly. It carries 14.4g of protein per 100g and just 1.5g of saturated fat, which is the sort of maths that wins arguments. If tofu has disappointed you before, the fault was probably the pressing, so start here and follow one of their recipes.
