The Old Forge at Dolphin Boatyard in Galmpton is an unlikely address for bottle-fermented cider, but that proximity to the water has shaped everything here. Bollhayes has been part of the Devon cider landscape for decades, working with classic West Country cider apples, long natural fermentations and the same methods used for traditional sparkling wines. The stated approach is disarmingly simple: respect the fruit, trust the craft, and let time do its work.

The core Bollhayes range runs from Still Dry and Medium Still through Medium Sparkling, Half-a-sec, the 2019 Traditional and a Sparkling Perry, with gift boxes and cider by the bag alongside. The younger Wild Coast label takes a brighter route: crisp Beach Break, bold Raspberry Rip, full-bodied Big Sky, tropical Mango Bay and a zero-alcohol option. Watch for the tasting sessions and blending workshops, which they are steadily expanding through the seasons.
