The orchard went in during 2016, planted with Cornish heritage apple varieties chosen for their range of shapes, colours and flavours - a small act of preservation as much as a supply chain. Callington sits in good apple country, and the fruit here comes from that orchard and neighbouring ones nearby, all local and organic. It is a proper maker's setup: grow the fruit, then work out what to do with it.
What they do with it is handmade apple fruit leathers, dried at low temperature so the flavour concentrates and the natural fibre stays put. No added sugar, no preservatives, nothing removed but the pips. The award winners are Hint of Raspberry, Hint of Cornish Seaberry and Hint of Blackcurrant, with apple and gooseberry and a seaweed version among the others. Good in a pocket, better than you would expect on a cheeseboard or torn through a salad.
