The Bosko Bus is a food truck parked on Bantham Beach, run by a family - Charly, Dave and Julia - who started it in May 2022 after years of dealing with their own digestion problems. They'd tried the usual run of fad diets before landing on something simpler: more fermented food, more whole grains, a better mix of meals rather than cutting things out. That thinking became the menu, badged as gut conscious rather than just healthy, and it runs alongside The Gastrobus on the beach through the school holidays and summer season.
The food is built around wraps, baps and bowls. The Bosko Bowl is quinoa, organic leaves and Asian slaw with a choice of toppings; the Grany Nola Totem Bowl is Greek yoghurt, berry coulis and homemade nut granola. Breakfast runs to a halloumi-and-egg bap, and the Banh Mi-style flatbreads come in halloumi, hoisin chicken and teriyaki mushroom versions, all finished with pickles and their own sauces. Extra protein - tempeh, halloumi, chicken, egg - can be added to anything, and they sell their granola by the bag to take home.
