Kellie started making chocolate in her Bridgwater kitchen in 2018, and the operation now runs from Holly Cottage at Meare Green, out at Stoke St Gregory near Taunton. She credits her late husband Rob as the muse behind it, the sounding board for ideas and worries alike. It is a one-chocolatier business in the truest sense, and the fussiness over quality that comes with that shows up in the finished boxes.

The base is Callebaut, made with beans sourced directly from farmer cooperatives in the Ivory Coast, Ghana and Ecuador through Cocoa Horizons, so growers get a better price for their yield. Expect handmade assortments, seasonal collections and milk, dark and white bars filled with distinctly flavoured creamy caramel. Bespoke flavours are worth a conversation by phone or email, and workshops and chocolate-making parties run periodically, so check availability before you plan around one.
