Two hundred Guernsey cows graze the clover pastures at Babcary, and every one of them has a name. Dave Paull, a third generation Somerset dairy farmer, runs the place with his partner Rosie; his favourite cow is a gentle one called Sunshine, hers is Rosey. The herd is milked twice daily in an immaculate herringbone parlour, which matters more than usual here, because most of what leaves the farm is unpasteurised.

Guernsey milk runs golden because the breed struggles to digest beta carotene from the grass, and it drinks thicker and silkier for it. Raw A2 milk comes in two pint bottles by the dozen, alongside raw cream and a pasteurised yoghurt with the berries stirred right through the pot. Taste of the West, Royal Bath and West and Great Taste awards have followed since the early 1980s. Check before travelling: raw milk sales are currently paused on precautionary TB grounds.
