Salt making was once serious business on Portland, then industrialisation killed it off. Jethro, a self-confessed sea salt obsessive, revived it in 2017 with backing from the Prince's Trust, setting up a salt works on Chesil Beach. Every flake is produced there: controlled brines, slow evaporation, delicate pyramid crystals harvested by hand, dried gently and packed on site before heading out to kitchens across the UK and beyond.
The natural flakes are the foundation, but the range has grown into nine blends, among them oak smoked, garlic, chilli, and lemon and thyme, at £6.49 for 100g. There is fine salt for curing fish, rubs for marinades, and a grinder for anyone who would rather not crush crystals by hand. Their own argument is worth testing: try it on white chocolate, in ramen, or over an espresso.
