Pronounced way-vee, this is a mother-and-daughter operation working out of a converted Land Rover Defender 110, run out of Exmouth and built around the sea, surfing and yoga as much as coffee. The founding idea was simple enough: the things you enjoy most shouldn't cost you your health or your standards. Around 90 per cent of what they serve comes from small independent West Country producers, which is a harder promise to keep than it sounds.

The coffee is organic and roasted in Cornwall by Origin. Cakes and pastries are all either gluten free or vegan, and there's a house coffee lemonade. Takeaway cups and lids are fully home compostable, and they push their suppliers to cut plastic from deliveries. You'll find the Defender at events and festivals across Devon and Cornwall; for weddings and private hire across Devon, Cornwall, Dorset and Somerset, they're taking bookings well ahead, into 2027.
