Charlotte and Angus lost their hospitality jobs overnight when the pandemic closed everything in March 2020, and filled the long weeks at home in Hackney with a fortnightly store cupboard ritual built around the canned fish they loved. Learning the craft from scratch in a tiny kitchen, they proved the idea at a micro-cannery in London, then moved west to Bridport. The name comes from their two young daughters. Fifteen people now work at the cannery in the West Dorset countryside.
The claim is the UK's first craft fish cannery, and the range of British Conservas is dictated by seasonality, flavour and the sustainability of the fisheries they buy from. Angus, who cooked at Trullo and Rochelle Canteen, writes every recipe and heads up the cannery team. Cans are preserved to hand-crafted recipes, then packed and wrapped individually.
