Nicola's makes bean-to-bar chocolate in an Exeter micro-factory, roasting, cracking and refining each small batch in-house so that every origin gets to speak for itself - sometimes bright and citrusy, sometimes deeper and more cocoa-rich. It is a slower process, and understanding what happens at each stage is the whole point of it.

The cacao is ethically sourced, chosen for flavour and transparency both, and the bars are award-winning; the dulse seaweed one is the flavour that surprises people. There are classes and tastings for anyone who wants to see how it is done, and a free club called The Slow Taste Society for those happy to slow down and taste more intentionally.
