Good Game's stated mission is to make the best tasting game and cured meat in the world, which is a large claim, and the awards suggest they are not far off it. Everything is done by hand, like true artisans, from a unit on Topsham Quay.
Every animal comes from people they know and trust - only wild game, free range pigs and grass-fed, slow-grown beef. The Wagyu bresaola is what they are known for around the Devon food festivals, alongside salamis and air dried ham in sliced packs. Salami Steve passes his experience on to anyone who fancies making charcuterie themselves, which is worth knowing if your interest runs past eating it.
